Your experience begins with a traditional aperitivo veneto: a tasting of cicchetti—Venetian small bites—paired with a local wine. These will include toasted bread with seasonal vegetable spreads (all zero-kilometer and lovingly prepared), savory vegetarian meatballs, and polenta bianca con saor (white polenta with slow-cooked sweet-and-sour onions, a beloved Venetian tradition and Slow Food specialty).
You’ll then learn to craft two types of fresh pasta:
- Bigoli al torchio, a thick Venetian pasta made with a traditional press and paired with a seasonal sauce
- A filled pasta like ravioli or tortelloni—or, if you prefer, fresh gnocchi
